Bridal Breakfast for Kari!


In honor of the Bride-to-Be!

 Mark wowed us with Eggs Benedict!!
(thank you Bethany for your help) 
But what blessed us even more was
 Mark's prayer 
for the shower and for his daughter!


Eggs Benedict Johnson Style!
Toasted English Muffins halves,
Slices of Canadian Bacon or ham warmed.
(Trader Joe sells the perfect round sized canadian bacon.)
Poached eggs,
Package of Knorr Hollandaise sauce, 
mixed as directed on the package.
You will need 1 cup of milk and 1/4 cup of butter for the hollandaise sauce.
Layer english muffin, canadian bacon, poached egg
and then top with Hollandaise sauce.
A dash of paprika adds color.
serves 8-10 eggs
(perfect for Christmas morning?)


For dessert we served:

Pumpkin Pecan Cake
ingredients:
1 can (16oz.) solid pack pumpkin
1 can (12 oz) evaporated milk
3 eggs
1 1/4 cup sugar
1 TB plus 1 tsp of pumpkin pie spice
1/2 tsp salt
1 pkg. Duncan Hines Deluxe Yellow Cake Mix
1- 2 cups chopped pecans
3/4 cup melted butter.

Directions:  Heat oven to 350 degrees.  Spray bottom of a 13" by 9" pan with Pam.
Combine the pumpkin, milk, eggs, sugar, pumpkin pie spice and salt.
Pour into your pan.  Sprinkle dry cake mix evenly over pumpkin mixture.  
Top with nuts and drizzle with melted butter.
Bake for 50-60 minutes or until golden brown. Serve warm.
Can be served with ice cream or cool whip with a dash of cinnamon on top if you like.


Maybe instead of pumpkin pie this year?

Granola as our favor.
And since so many of you were asking for the recipe, here it is:

God's Granola Mix
(From Calvary Chapel Conference Center)
Ingredients:
1 cup slivered almonds
1 1/2 cups coconut (sweetened flakes)
6 cups rolled oats (not quick)
1 1/2 cup walnuts (coarsely chopped)
1 1/2 tsp cinnamon
1/2 tsp ground cloves
pinch of nutmeg
1 cup canola oil
1 cup honey
instructions- 
Preheat oven to 325 degrees.  Baking time is 10-12 minutes.  
In a mixing bowl, combine all ingredients except the oil and honey.  Mix the oil and honey in a saucepan and heat on the stove until it begins to boil, remove from heat.  (Keep an eye on this, when it begins to brown it can get hot too quickly.)  When the honey and oil are heated, combine with the dry ingredients and stir with a spoon.  Spread out on a cookie sheet and bake.  You may need to bake it in two batches.  After it cools, store in an airtight container. 
Other ingredients can be added to your liking before baking, such as sunflower seeds, or other nuts or grains;  or after cooking, such as dried fruits, raisins or even chocolate chips.
